I don't think its a certain food/foods they are given that help them lose weight. I believe its just a diet based on caloric intake. Meaning, they can only have so many calories per day and they structure their meals based on the number of calories the person is allowed to have.

My mums friend was morbidly obese and had to have gastric bypass surgery. She was the correct weight to have it done. But after the operation she was only allowed 3 shakes a day for 3 months that had 200 calories in them, so that's a 600 calorie diet for 3 months. The weight dropped off her though. She went from 280lbs to 150lbs in 2 years and she's 6'1" and super healthy now and does all these talks at weight watchers. Really inspirational.

Jessica is right it is based on calories. I watched a documentary too. These people on their own would eat up to 10,000 calories or more per day. When they are in the hospital the reason they lose weight so quickly is because they are restricted to usually 2,000-3,500 per day. This is all healthy cooked food of course which fuels them for their workouts. 3,500 calories may seem like a lot to you, but when you think of it, its not that much compared to what they used to eat. Compare this with exercise and that is why they drop weight like crazy in a hospital. When they lose weight though these diets do not work as well. I mean if you were 120 pounds 3,500 calories would make you gain weight while it makes a heavier person lose weight. There is a counter balance that once you reach, you start going down.
They may not be able to get up but just moving their legs in place or arms can be enough exercise to drop 20 or more pounds a week. It is because they weigh so much that simple movements cause them to burn a lot of calories. They weigh so much that moving alone is enough of a work out for their heart. Combine that with a much healthier diet and its no wonder they drop like crazy.
So its not rocket science. Eat less and exercise more whether you need to drop 30 pounds or 300.

Getting up, moving around, and exercising will reduce the amount of food that you will need to cut back on. There are obviously many opportunities to be athletic and active (i.e. sports teams, the gym, going for a jog, etc.) if that interests you, but these aren't the only ways to increase your activity level. You can walk to school, bike to work, walk up and down the stairs a few times before you take a shower, take an extra lap or two around the grocery store.
